"If people made the effort even 20 percent to eat local, it would have a huge impact
on the environment, the local economy and their communities," says Sarah Irani of
Frederick. Irani, a 29-year-old sculptor who moved to the area from rural Michigan six
years ago, says she originally became interested in organic food for health reasons.
Moving to a more densely populated area shifted her focus to a local diet.

"Eating local isn't just about health," says Irani. "The more time you spend eating
really good food, your taste buds acclimate. I recently had the greatest bunch of
broccoli from the Frederick farmers market. It was so unbelievably delicious. And it
didn't sit on a truck for three weeks, frozen."
